up in st. louis, but cut his teeth on the culinary scene in new york and new jersey - having quickly risen through the ranks at notable restaurants such as Ninety Acres,
Ai Fiori, Lincoln Ristorante, Franny’s Brooklyn, and Costata before relocating to dc with stints at both osteria morini and the riggsby.
since joining birch & barley in september 2016, bill has completely revamped the menus and plans to continue the restaurant’s strong relationships with local farmers, purveyors and foragers to create approachable and unique meals, with a focus on seasonal dishes.
